Jermery is an MCA / IYT Yachtmaster offshore. He has worked as a sailing instructor in Australia, teaching Yachting Australia Inshore Skipper courses and IYT Megayacht Deck Crew courses, and has crewed on commercial yacht deliveries as well as participating for fun in weekly sailing regattas. His deep enjoyment of the sea includes exploring below the surface: he is also a keen diver and snorkeler. His love for travel has taken him from his native England to places as diverse as Egypt, Russia, Mexico, Hong Kong, Australia and finally the British Virgin Islands.

Carissa is passionate about good food and travel. She grew up in a family dedicated to the pleasures of the table, and has been a hardened restaurant habituée since she was an infant. She has had over ten years of experience in catering and various aspects of the gourmet food industry. Although originally qualified as a graphic designer, she prefers to express her creative energies in preparing fresh, seasonal cuisine, and also enjoys the challenge of creating menus to suit special dietary restrictions. Her repertoire is based on classical technique, but the flavor variations reflect her travels through Mediterranean Europe, Egypt, Jordan, Syria, Persia, Mexico and parts of South-east Asia. Having grown up in Australia she has always enjoyed the water and sailing, she has worked in the Canary Islands, the Sinai, Costa Brava and the British Virgin Islands.

Jez and Caro met in the Red Sea, realized their shared devotion for travel and the ocean while in Mexico, and were married on Sydney Harbour. They love being able to use their hospitality, experience, attentiveness and warmth to create the conditions for a wonderful, stress-free vacation for their guests, ensuring a fabulous sailing vacation for everyone.
